Carrot Crackers are a surprisingly easy and tasty snack for the whole family.
I’m always looking to try new recipes for baby snacks that let me to use things that I have in my pantry and isn’t it great when you can add in a few vegetables. I found that making cheese sticks was a huge hit with my little guy, they were easy for him to chew on and were a simple homemade snack. I really like the result of these carrot crackers, using 1 tsp of baking powder you get a fluffier cracker, they are also made without egg so they are great if you have an egg allergy. We ate them as breadsticks with spaghetti one night getting in an extra vegetable and not even noticing.
Don’t worry about them having a carrot flavour they just taste like breadsticks. You could easily add some spice like curry powder or maybe a bit orange zest to give it a different flavour.
1 cup all-purpose flour
2 tbsp grated parmesan cheese
1 tsp baking powder
1/2 cup carrot, finely shredded
2 tbsp vegetable oil
Set oven to 400 degrees. In a large bowl mix all dry ingredients. Add carrots and mix until coated. Add in the oil and work until it comes together as a dough. If its too dry add some more oil. Roll flat and cut into .5″ x 3″ sticks. Cook for 8 minutes or until they are lightly browned. Transfer to a wire rack to cool, then enjoy.
